BAKEA combines passion for iron, fire and gastronomy in a proposal rooted in Mungia, in a valley near the coast of Bizkaia, with just over 17 thousand inhabitants.
It combines ingredients, traditions and memories in its own interpretation of Euskal Herria, as a shared cultural and geographical space.
In a calm and peaceful atmosphere, inspired by the surrounding txokos, BAKEA offers to enjoy the best of each season, recognizable flavors or everyday references, conceived under the eyes of the sukaldari Alatz Bilbao Products, techniques, materials, gestures, ways of eating or drinking ... all anchored to the territory, but without forgetting: "those from Bilbao are born where they feel like it".
Bakea is also a workshop. From the same workshop and transformation process come the different creations of the project, material, artisanal or culinary.
It is, therefore, a place of shared execution and inspiration where we produce from the wood stove that we use daily (designed entirely by us), a good part of the tools, instruments, crockery, household items or tools; in addition to the various culinary proposals that we elaborate.
Bakea serves using wood from native woods such as beech, oak or vine shoots.
BAKEA's ingredients are the result of direct exchange with Mungialdea's network of suppliers. Depending on seasonal availability, we design a tasting menu of approximately 13 courses with the option of food pairing.
To drink, Bakea offers the possibility of getting to know wines produced in the vicinity of its territory, as an opportunity to discover alternative options with great potential (option available for corkage).
Alatz Bilbao Sukaldari from Bakea
In contact with metal, he made a living. The fact that his family was dedicated to metallurgy translated into a first path, but neither like father nor like son. For five years he worked in a workshop in Mungia, and not exactly the one he was supposed to: playing on the opposite side had its advantages; employed in the competitor's workshop he learned to change his perspective. In contact with fire, he learned to cook.
